Responsibilities:

  • Organizing and directing the work of the kitchen staff in consultation with the Chef,
  • Supervision of the Italian a'la carte restaurant and active participation in the operational work of the kitchen,
  • Optimization of employment costs,
  • Conducting the purchasing process and control over the proper management of raw materials ,
  • Maintaining appropriate operational indicators - food cost,
  • Participation in the creation and supervision of the implementation of the department's operating budget,
  • Preparing an offer of dishes for a'la carte outlets based on seasonality and the principles of menu engineering,
  • Taking care of the hotel's image and representing it outside the facility,
  • Maintaining and strictly observing sanitary, safety and HACCP regulations.
